A compote is basically cooked fruit sauce and it maintains some of the fruits texture and integrity. In the case of apple compote, the fruit holds it's shape very well. Compotes can be flavoured with spices (like cinnamon here) and can be served warm or cold. They can be sweetened or not.

- Apples: The great thing about apple compote is you can use any apples. Some hold their shape better than others but all will work. I love Granny Smith apples as they hold their shape well and have a little tartness. Other great options are Pink Lady, Golden Delicious or Gala apples.
- Sugar: Brown sugar goes beautifully with apples and cinnamon, adding to the autumnal flavour.
- Flavouring: Cinnamon is a classic with apples and a little vanilla extract adds a little more warmth.
- Apple cider vinegar: This adds tartness but you can swap it for lemon juice.

Now, simply cook for around 10-12 minutes until the apples are softened to your liking.
Apple compote is at its loveliest served warm but it can also be eaten cold.
Tips and tricks
- Use a heavy-based saucepan. Using a thin pan can result in the sugars catching on the bottom long before the apples are cooked. A heavy based pan will evenly distribute the heat throughout making it less likely to catch or burn.
- Keep the heat low-medium. This will ensure the apples cook through gently without burning on the outside.
- Stir regulary. This is just to make sure it doesn't catch on the bottom of the pan.

Fridge storage
Transfer the cinnamon apple compote to a jar, with a tight fitting lid but let it cool before screwing on the lid. Store it in the fridge for 5-7 days.
Freezer storage
Apple compote freezes quite well though there may be a slight change in texture. You can freeze it in smaller portions like these large silicone ice cube trays. This way you can thaw only as much as you need. Or freeze it in a large ziplock bag with all the air pressed out.

Cinnamon Apple Compote
Equipment
- jar with tight fitting lid
Ingredients
- 4 granny smith apples
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- 2 teaspoons apple cider vinegar
- ½ teaspoon vanilla extract
Instructions
- Peel and cut the apples into small cubes (about 1cm). Discard core and skins.
- Add the apples, sugar, cinnamon, vinegar and 1 tablespoon of water to a medium saucepan.
- Cook over low heat for 7-10 minutes until the apples are tender.
- Stir in the vanilla, then remove from heat.
- Serve immediately or let it cool to room temperature then store in a jar with tight fitting lid in the fridge for up to 7 days.
