• Flavouring: Cinnamon is a classic with apples and a little vanilla extract adds a little more warmth.
• Apple cider vinegar: This adds tartness but you can swap it for lemon juice.

Tips and tricks

1. Use a heavy-based saucepan. Using a thin pan can result in the sugars catching on the bottom long before the apples are cooked. A heavy based pan will evenly distribute the heat throughout making it less likely to catch or burn.
2. Keep the heat low-medium. This will ensure the apples cook through gently without burning on the outside.
3. Stir regulary. This is just to make sure it doesn't catch on the bottom of the pan.

Fridge storage

Transfer the cinnamon apple compote to a jar, with a tight fitting lid but let it cool before screwing on the lid. Store it in the fridge for 5-7 days.

Freezer storage

Apple compote freezes quite well though there may be a slight change in texture. You can freeze it in smaller portions like these large silicone ice cube trays. This way you can thaw only as much as you need. Or freeze it in a large ziplock bag with all the air pressed out.
